Ingredients:
- 4 boneless, skinless chicken breasts
- 2 bell peppers, sliced
- 1 onion, sliced
- 1 can 14
- 5 oz diced tomatoes, undrained
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
- 2 tablespoons tomato paste
Instructions:
Place chicken breasts in the bottom of the slow cooker
Top with sliced peppers and onions
In a bowl, mix together diced tomatoes, minced garlic, oregano, basil, salt, and black pepper
Pour tomato mixture over chicken and vegetables
In a separate bowl, mix together chicken broth and tomato paste until well combined
Pour the chicken broth mixture over the top of everything in the slow cooker
Cover and cook on low for 6-8 hours or high for 3-4 hours, or until chicken is cooked through and tender
