Chocolate Chip Zucchini Quinoa Muffins



These chocolate chip zucchini quinoa muffins are a healthy treat that will fill you up. They're great for breakfast or as a healthy snack. They don't contain gluten, are full of protein from quinoa, and taste great with the freshness of grated zucchini and chocolate.

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup grated zucchini, excess moisture squeezed out
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips vegan if desired

Instructions:

Warm your oven up to 350 F 175C and put paper liners in a muffin tin

Mix the cooked quinoa, grated zucchini, maple syrup, cocoa powder, eggs, vanilla extract, baking soda, baking powder, and salt in a large bowl

Make sure to mix the ingredients well until they are all well mixed

Do not stir the chocolate chips into the batter too much

Fill up about three quarters of the way to the top of each muffin cup with batter

If you stick a toothpick into the middle of a muffin, it should come out clean after 20 to 25 minutes in a hot oven

When you take the muffins out of the oven, let them cool for a few minutes in the pan before moving them to a wire rack to cool all the way through
