Ingredients:
- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp barbecue sauce
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 8 small taco shells or tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup diced red onion
- 1/4 cup chopped fresh cilantro
- Vegan sour cream or yogurt for topping
Instructions:
Turn on your oven and heat it up to 425F 220C
BBQ sauce, olive oil, smoked paprika, garlic powder, salt, and pepper should all be mixed together in a bowl with Brussels sprouts
Toss the Brussels sprouts to cover them all over
Place the Brussels sprouts in a single layer on a baking sheet
After the oven is hot, roast the Brussels sprouts for 20 to 25 minutes, stirring them once halfway through, until they are soft and slightly caramelized
Follow the directions on the package to warm the taco shells or tortillas while the Brussels sprouts are roasting
Put together your tacos while the Brussels sprouts are cooking
Put shredded lettuce in the bottom of each shell first, then the roasted Brussels sprouts
Mix tomato, red onion, and fresh cilantro into small pieces and sprinkle on top
Veggie sour cream or yogurt should be put on top
Serve the Brussels sprouts tacos with barbecue sauce right away and enjoy!
