Easy Broccoli Rice



This Easy Broccoli Rice recipe makes it easy to plan your meals ahead of time. This gluten-free, paleo, Whole30, and keto-friendly side dish is made with just four simple ingredients, such as fresh broccoli florets and garlic. It's a healthy alternative to regular rice. Plus it's quick, simple, and useful!

Ingredients:

  • 4 cups broccoli florets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions:

In a food processor, pulse the broccoli florets until they resemble rice grains

Be careful not to overprocess

Heat olive oil in a large skillet over medium heat

Add minced garlic to the skillet and saut for 1-2 minutes, until fragrant

Add the pulsed broccoli to the skillet and saut for 5-6 minutes, stirring occasionally, until tender

Season with salt and pepper to taste
